21 DSD Day 11, Busy, busy,busy!

Gallon of goodness

Gallon of goodness

Today I spent all day cooking for something called a meal train.  There is a family, man wife and two children.  He is undergoing Chemo treatments and mom is busy working and taking care of two kiddo’s 6 years and 3 months.  A meal train is something that someone sets up and people volunteer to make and take a meal.  I volunteered and wanted to take enough over so there would be a good amount for left overs as well.  I made Paleo Turkey Pot Pie Soup.  It’s been a little cold here so I wanted to make something comforting, warming, filling. nurturing, tasty and above all healthy.  I just have to say, Turkey’s have HUGE wings!  I got one wing and it weighed 2 pounds.  Their thighs are pretty darn spectacular as well, huge heavy and very meaty weighing it at over 3 pound each.  The night before I make the soup, I put in my crock pot the turkey parts, 3 carrots to line the crock pot, 1 onion whole, one large bunch of garlic whole, 2 tsp sea salt, black pepper and 2 TBS Apple Cider vinegar.  I woke up at 4:00 am and I had turned my handy crock on to defrost to start off, so I switched to to low at 4:00 am.  When I got to the nitty gritty at 8:00 am the house smelled divine.  I turn my crock off and let pulled the turkey meat and parts out to cool.  I strained the broth into my largest soup pot and began chopping and dicing vegetables.  I use cauliflower puree and full fat coconut milk to thicken my Pot Pie soups.  This gives it a very creamy thick gravy like consistency and a extra few servings of vegetables.  The best part is you can sneak the hated cauliflower past children and husbands easily without their knowledge.

I also decided to make a roll to go with this hearty soup and decided on the Herb drop biscuits in the 21 DSD book.  I will tell you, you need these biscuits in your life!  They are now on my Thanksgiving list!  I will have to tell you though, if you want the recipe you will have to by the book, sorry I can’t give it out.  But what I can do is show you a picture of mine.

I was so busy running around and cooking that I was not hungry again.  I don’t know if this is good or bad, but I’m just going to let my body choose when it wants to eat.  I really didn’t have much today.

Breakfast was a Bullet Proof Coffee\

Lunch was 1 cup of  fut fat organic Kolona cottage cheese

snack was 2 ounces Grass fed Cheddar cheese and small handful of pistachio’s

I will post the recipe for the soup as another post, so this one doesn’t get too long

21 DSD Day 10, I’m just not hungry.

I started my morning with my usual Bullet Proof coffee, with my additions.  16 ounces of hot dark roast coffee, 2 TBS Kerry Gold unsalted butter 1 tsp cinnamon and organic heavy cream.  put all that in my Blendtec blender and it’s just like a Latte!  I have tons of phone calls I make and errands to get done.  I get that done and move to time to fuel my body.  I have two Buffalo Chicken Egg muffins and a 1/2 cup of cinnamon roasted Butternut squash.  I have to show some love to Balanced Bites for this!  Here is the link for the recipe,  and the site.  I highly recommend the book!!!  http://balancedbites.com/2013/02/easy-recipe-buffalo-chicken-egg-muffins.html

I go to see my Chiropractor today, but thought I’d take care of getting the shopping done for my Angel Tree gift.  It’s 1:00 in the afternoon on a Wednesday and the whole city of Dallas decided they were going shopping at Walmart.  Needless to say, I left empty handed and had just enough time to get to my 3:00 p.m. visit.  I leave Dr. Cox’s office feeling awesome and go to get what I need for the Angle Tree. I munch on a small handful of pistachio’s on my way to Hades/ Walmart.   As I’m finishing up my visit to Hades,  I mean Walmart, I realize, I haven’t eaten much today.  I remember that I had gotten some really good sugar free Nitrate and Nitrite free Chicken breast from the deli at my favorite scary store and I go get some.  I grabbed a bunch of green tipped banana’s while I’m there.  I pay for my items get in the Black Beast ( Dodge Ram, I love this truck, btw!!!)  And munch on some meat and a banana on my way home, in RUSH HOUR TRAFFIC!  I get home and figure I’d better have something else to eat today.  I go into my kitchen and literally throw together a really tasty soup.  I will give the details below, after I show off my epic brunch.

1 cup Trader Joe’s frozen Parisian carrots

3 green onions

1 tsp garlic granules

1/2 tsp sea salt

21 DSD Day 9, no really I got this now!

I started out my day really slow and mellow.  Then I put my head phones on and BOOM!!!!  Energy and focus became mine.  I went and did my errands, went to the store and found what I needed.  Once I got home I started cooking.  I opened my 21 DSD book and decided to make the Buffalo Chicken Egg muffins.  I will give you the link below for the recipe.  Lunch was given to my by my BFF Tiffany, who lives across the street from me.  So no pictures of that today!  Level one on the 21 DSD allows dairy and cheeses, full fat raw milk or at the very least Organic.  Yes there is a reason I put that in here.  I put my chicken in the oven to cook and continue with the recipe.  I love the finished product so much I had it for dinner tonight.  Let me show you what I made.

Image6 of the 16 it makes and they are very tasty. here’s another shot, the close up

ImageI have an idea for a modification.  I’m going to add just a few Blue Cheese crumbles to it next time I make it.

What I ate today,

Coco monkey shake and soft boiled eggs with Kerry Gold butter and Turmeric.

Lunch there is no picture and I wish there was because it was awesome.  Tiffany made Spaghetti squash lasagna!

21 DSD Day 8 It seems all I do is cook, prepare and buy food!

I’m starting to feel like I am consumed with nothing but preparations for the 21 DSD so I don’t slip up or fail!  Yesterday I had a case of the I don’t want to do anythings.  That put me leaving the house to go to Costco at 4:30 p.m.  I had taken out the eggs I needed to make one of the recipes in the 21 DSD book and it was so late by the time I got home, I ate them for dinner.  I will say though I got side tracked at J.C. Penny’s buying Christmas gifts.  I am happy to say, all the females on my list that are in Texas are done!!!  And a bonus two guys are taken care of as well.  I did get my DH something for his birthday, December 8th 🙂 , now I only have the DH, my sister and husband, mom, mom in law and two brother in law’s left.  And last but not least the 3 teen nephews and one new nephew!  The teens get cash, so they are pretty much taken care of as well.  Not a lot of food pictures for the 8th day, but I will list what I had where there is not pictures.

ImageCarrot pumpkin muffins topped with Kerry Gold Butter and Almond butter , BACON!!!!!

ImageNot very hungry, so I had Kalona full fat cottage cheese and Greek tomato cucumber salad.

Dinner was 4 scrambled eggs and Brussel sprouts Tiffany gave me.  I snacked on 1 ounce of cheese and pistachio’s when I shopped.  That’s it for today.

21 DSD Day 7, I think I got this!

Energy with out drinking extra caffeine is a wonderful thing!  I started taking Natural Calm three nights ago.  I don’t know if it’s a coincidence, but I’ve been sleeping better.  I was busy getting ready for our cold snap this week, but nothing odd is happening, no craving except when I come face to face with chocolate.  So far I have escaped any slips and I will continue to do so.  I found a new tea I absolutely adore, Republic of Tea Peppermint Chocolate.  I had a cup last night with just a splash of full fat cream.  It was a great way to end the day!  I have another flavor I got and I’m going to give it a try tonight, Red Velvet Chocolate.

What I ate today,

ImageCoco Monkey Smoothie and bacon.  This was the best bacon I have ever had in my adult life.  I got it through my co-op R.O.C.K. in Dallas Ft. Worth.  The bacon was so good it almost didn’t make it into the picture.

ImageWild caught Coho Salmon poached with dill and Capers and my vegetable was,

ImageSteamed zucchini with Kerry Gold butter, cracked black pepper and a dash of sea salt.

ImageDinner was fantastic Portabello mushroom and feta omelette with Greek tomato and cucumber salad, recipe below.

1 large tomato

1 English cucumber

15 Calamata olives sliced

1 tsp Oregano

2 TBS olive oil

2 TBS Red wine vinegar

4 TBS crumbled Feta cheese ( I used goat’s milk feta)

Sea salt and pepper to taste

21 DSD Day 6, just food stuff and produce co-op!

Just rolling along trying to stay focused.  I would have killed for one of the apples, pears or oranges I got in my co-op basket this week.

I got a share of a new produce co-op I found today and when I got the produce home I weighed it, then did a vinegar water bath.  Twenty five pounds of organic produce for fifty dollars.  Not bad, not bad at all.  Here’s what it looked like.

ImageThe only thing missing is the avocado’s.

ImageThis was taken after the vinegar and water wash and I took the tops off the carrots.

Now on to what I ate for the day.

Image2 fried eggs with Turmeric and my favorite smoothie with extra avocado and baby spinach.  That combination gets really thick!

Lunch was left over stir fry from day 5.

ImageGrass fed ground beef patty topped with avocado slices, steamed carrots with Kerry Gold butter. Yum!!  And I didn’t know how sweet carrots were until trying them on a sugar detox!  They tasted like candy to me, almost cloying!

I started taking Natural Calm today at bed time.  I also got a little hungry so I had a glass of raw milk warmed up a little and added 1 tsp vanilla and cinnamon.  I knocked out like a baby after that.  I think that was the most sound sleep I have had in ages.

21 DSD Day 5, still hanging on!

I haven’t really noticed anything different, no major mood swings, no carb flu, no break outs.  I do tend to not be as hungry as I was.  What I did notice is when I finally do get hungry I am HANGRY, ( hungry and angry) and a little, okay a lot mean.  I tend to get caught up in what I’m doing and since I don’t get little hunger pains, when I am hungry it’s really late.

I have my bullet proof coffee every morning one hour after I take my thyroid medication.  Which has been 16 ounces of hot coffee 2 TBS unsalted Kerry Gold butter, 2 TBS Raw cream and either cinnamon or cacao powder.  Today just plain, no added spices.   I will usually have some breakfast around 10:00 to 11:00 which I have been on a smoothie kick lately.  I have pictures and will list ingredients.  Then I get errands and chores done.  The last week almost two, that has included taking care of a sick husband and some really fun dogs I have been dog sitting.  I have been letting my time management skills go to the dogs!  I have been having a lot of fun playing and loving on these three sweet pups and time has just swooshed by.  I’m going to miss my daily visits with them!  Then after playing with the bff’s gang, I have to show my own rotten children extra love, because they can smell that I have been cheating on them.  I notice wow, it sure seems late.  And that’s when it hits.  It’s 8:00 p.m. and I need to eat before I start gnawing on my own leg.  I muster up the umph to cook myself some dinner.  Let me tell you my inner brat is screaming, just go to Chipotle and get food!  I even heard the call of McDonald’s and I can’t eat McDonald’s without getting very, very sick.  But the lazy brat in me doesn’t seem to care.  I usually shut that little bad girl up by nibbling on a 1 ounce piece of grass fed cheese while I throw dinner together.  Because believe it or not, throwing together some real food and cooking it is a lot faster than, getting in your car, driving to what ever bad for you and expensive drive through you can get to is.

I will admit, I don’t know if I will be posting every day or every other day like I said I was going to try to.  Life is full of surprises and sometimes we all just get busy.  I am making myself take pictures of most if not all of my meals.  That is what helps keep me accountable and reminds me of what is good and not so good.  Okay, here comes the pictures of food I ate for day 5.

Image2 eggs fried in bacon grease and my now favorite smoothie Coco Monkey Smoothie.  The recipe is in the 21 DSD book.

here’s how it looks going together.

ImageAvocado and frozen green tipped banana.

ImageAlmond milk, cacao, Almond flour and cinnamon.

ImageGrass fed ground beef stir fry.  Fast easy and leaves a lot of left overs.

1 cup snow peas

1 pound grass fed ground beef

1 cup sliced mushrooms

3 cups Tri-colored coleslaw mix

1/4 cup finely diced white onion

granulated garlic

black pepper

sea salt

Red Boat Fish sauce

Coconut Aminos

brown beef until almost done, just a little pink left, then add the rest of the ingredients.  Cook until ground beef is done, no longer pink.  Continue to cook until vegetables are crisp tender or however you prefer them.  Drain off excess water from vegetables and add Coconut Aminos and Fish Sauce.

Imageeasy peasy fast quick and in a hurry stir fry.

ImageDinner was left overs and a epic steamed Artichoke served with garlic butter for dipping.

21 DSD day 3 & 4 and I’m still alive and nobody has been killed ;)

I was feeling tired and a little cranky on day 3.  My DH is still very sick so that has kept me quite busy.  I’ve been taking pictures of most of my meals just to help me keep track of the likes and dislikes and what I am eating.  Pistachio’s have been saving me while at doctors offices and pharmacies for my DH.  I’m going to really load up on the food pictures on this post because I skipped a day.  Today’s post will cover my day 3 and 4.  I am on the tail end of day 5 whilst typing this.  One thing before I forget.  I got some Green Pastures Blue Ice Royal Butter oil/ Fermented cod liver oil blend gel in cinnamon tingle.  I have come to realize I am the biggest pansy in the world.  Oh my this stuff is hard to get down!  The first time I took it was when I first got it and it was liquid, sorta, but not really.  It’s almost about to turn me off cinnamon.  I take one dose a day and I really hope this horrifying goop has great benefits, because it is close to torture.  I have to talk myself into to taking it, blech!!  If anyone knows of a better way to get this stuff ingested please tell me, please!  Ok, enough of that, on to the good stuff.

ImageBreakfast smoothie made with Raw cow’s milk, 1 frozen green tipped banana, 2 TBS Almond butter 1/2 tsp cinnamon and a hard boiled egg.  I needed avocado for this but the ones I got at the farmers market this past weekend were no good 😦

Imageoven baked chicken and cucumbers with olive oil, vinegar and salt and pepper.

Dinner was rotisserie chicken and cucumbers, nothing picture worthy.  I had a glass of Raw milk before bed.

On to day 4,

Imagecarrot pumpkin muffins topped with coconut butter mixed with cinnamon and  two eggs fried in Ghee with Turmeric.  Very filling breakfast!

Imageleft over rotisserie chicken and cucumber salad made with cherry tomatoes, Kalamata olives, a English cucumber, olive oil, balsamic vinegar, cracked black pepper, oregano, basil and sea salt.  I decided I wanted feta cheese to top it off for the next time.  I decided to go shopping after lunch.  Dinner was left over chicken and cucumber salad with feta cheese added.  I got a few other things I needed to make the smoothie out of the book for day 5.  Time to go into the kitchen and make some Chia seed pudding for tomorrow.  The question is should I do chocolate, cinnamon or a combination of the two?

21 DSD day 2

It was pretty uneventful for day two except for the fact my right shoulder problem moved to my neck and I couldn’t turn  my head.  I go to see my Chiropractor today at noon.  I’m really glad I had cooked extra chicken and boiled eggs on hand.  I did get a little snippy with my husband, but that could be because of the pain or the detox.  I will admit walking past the cookies my husband has on the counter was pretty hard.  I took care of that problem this morning, I threw  them in the garbage.  DH is sick with a virus right now, Stomatitis.  He can’t eat or drink without pain so we’ve been to see the doctor twice in two days.  If this keeps up it’s the ER for him!

Yesterday for breakfast I had two eggs fried in bacon grease sprinkled with Turmeric and a super easy fast butternut squash soup.  I will give you the recipe for the soup.  You can have 1 cup of butternut squash on Level 1 of the 21 DSD and I needed some kind of a veggie that didn’t take much effort.  I happened to have fresh butternut squash puree in my fridge ( go me thinking ahead).

Image

recipe for soup

1 cup butternut squash puree

1 cup chicken bone broth

3 TBS Raw milk

1 heaping tsp cinnamon

mix well heat and eat.

Lunch was a super big chicken thigh and spinach sauteed in bacon grease with black pepper and garlic.

Image

Dinner was a wash, it was late after getting home from the Minute Clinic with my DH and my pain level was through the roof.

I made a smoothie with 1 frozen green tipped banana 1 cup raw milk 2 TBS almond butter and cinnamon. I ate a hard boiled egg with that.  No pictures.  I also snacked on pistachios today.

I do know that if I can move my head after the Chiropractor today, there will be a visit to Trader Joe’s for the rest of the ingredients for the smoothies in the book and some more butternut squash.  I really need more vegetables in my life, but without many of my old favorite dressing options for salads, I’m not in a rush to eat a salad!

Day 1 on the 21 DSD.

I am going to try and post every day, if not every other day.  I will post pictures of what I eat, the good, the bad and the ugly!

I will also try and tell you how I’m feeling.

What I ate the first day;

Breakfast ~ Carrot pumpkin muffins from the book, topped with Apple pumpkin butter, maybe 1 TBS ( 21 DSD approved the recipe) and bullet proof coffee made with Kerry Gold unsalted butter, coconut oil, cinnamon and cacao powder.

Image

Lunch ~ Two eggs fried in bacon grease on top of Spaghetti squash hash browns.

Image

Snack ~ Very small Granny smith apple ,Sunflower seed butter and 1 ounce of raw milk grass fed cheddar cheese.

Snack while shopping ~ Pistachio’s ( this was to keep me from sampling Holiday stuff!)

Dinner ~ 2 roasted chicken wings, drumstick ,a few slices of chicken breast with asparagus and a glass of raw milk.  No pictures of the chicken or asparagus, they weren’t picture worthy 😉

How I felt ~ hungry all day and I was making sure to drink a lot of water and had 8 ounces of Home brewed Kombucha.  I made extra chicken last night and boiled some eggs.

I’m having a hard time with some pain right now, due to getting tackled by a sweet playful pup on Sunday night.  The pain was in my shoulder ( rotator cuff injury from years ago) on the right and today I can barely move my head and neck.  The good news it’s not diet related and I go see my Chiropractor Wednesday!  The bad is it’s making it difficult to type, cook, drive, shower, get dressed and everything else I forgot to mention.  Here is to day 2 of the 21 DSD!!!  Oh and nobody has died yet 😉
