I have seen many recipes on Pinterest about faux Alfredo sauce and healthier versions of the butter and cream filled awesomeness that is Alfredo sauce. I finally caved and gave it a try, much to my surprise it is really, really good! I tried it first without any dairy and decided to add the Parmesan cheese to it for a little more pizzazz. I will have to warn you though, full disclosure and all, I love garlic. I use garlic in everything I possibly can and a lot of it. I will be making this again and very soon, since I got more cauliflower in my co-op share this weekend.
1 head of cauliflower cut into florets
8 cloves of fresh garlic, minced
4 cups of broth ( I used my chicken bone and feet broth)
1/2 cup shredded Parmesan cheese ( I used a little less)
salt and pepper to taste
bacon grease, butter, ghee or coconut oil ( to cook garlic)
Melt bacon grease, add minced garlic cook until almost crispy, set aside. In a soup pot add broth and cauliflower to pot and cook until cauliflower is very tender, using a slotted spoon put cooked cauliflower into Blender or food processor, add garlic and 12 ounces of the broth and blend until creamy. Add Parmesan and blend until smooth, add salt and pepper to taste. I had baked a spaghetti squash and grilled some chicken thighs to go with my Califredo sauce, which went great together!!

Hash browns, I love them, but according to some, white potatoes are not Paleo. I have my own thoughts on that, but they are a night shade and those tend to cause me issues, some more than others. I wanted something, not a sweet potato to try instead. Spaghetti squash to the rescue, again! I will have to say I was very happy with my results. They were not at formed as the potato, but they worked and what I cooked them with made them taste awesome! I will try and tweek them out a little more to see if there is a way to help them keep their form better. Maybe using the dehydrated spaghetti squash would work better.
I made the “hash browns” to go with my eggs and bacon.
1 cup cooked spaghetti squash
2 shallots chopped
1/2 tsp garlic ( I love garlic)
salt and pepper to taste
bacon grease to cook with
melt bacon grease in a pan, add chopped shallots, cook until just tender. Add chopped spaghetti squash,garlic,salt and pepper. Cook until browned.
They do try and fall apart when you put them on the plate, but they are darn tasty!!

I was really good about posting on my 21 Day sugar detox, then I got tired of posting. I did make it through the whole 21 days, then Thanksgiving with my family in Arkansas. I pretty much bailed out on just eating real food and I feel like crap!! I am sorry I stalled out on posting what I ate and went through on my 21 DSD, but I am doing it again. I will start January 6th with the groups. It is the first Monday of the month. In celebration of that I am eating real food today! It’s not 21 DSD compliant unless you work out or are pregnant or nursing. I am none of the above!! I will attempt to purchase the new 21 DSD cook book, but since funds are low, it may not happen in time for the start. Okay, here are my breakfast pictures below.
Homemade organic apple sauce sprinkled with a touch of cinnamon. I took all the apples I had and chopped them up, put them in my crock pot and let them cook on low over night. Nothing added to them at all, skins left on. I let them cool a little and put them in my Blendtec blender on the soup setting.
Farm fresh eggs and bacon with sweet potato hash browns. Cooked in, yes bacon grease!! J.E.R.F. = Just eat real food. I really need to stay focused on that!!!
It was pretty uneventful for day two except for the fact my right shoulder problem moved to my neck and I couldn’t turn my head. I go to see my Chiropractor today at noon. I’m really glad I had cooked extra chicken and boiled eggs on hand. I did get a little snippy with my husband, but that could be because of the pain or the detox. I will admit walking past the cookies my husband has on the counter was pretty hard. I took care of that problem this morning, I threw them in the garbage. DH is sick with a virus right now, Stomatitis. He can’t eat or drink without pain so we’ve been to see the doctor twice in two days. If this keeps up it’s the ER for him!
Yesterday for breakfast I had two eggs fried in bacon grease sprinkled with Turmeric and a super easy fast butternut squash soup. I will give you the recipe for the soup. You can have 1 cup of butternut squash on Level 1 of the 21 DSD and I needed some kind of a veggie that didn’t take much effort. I happened to have fresh butternut squash puree in my fridge ( go me thinking ahead).
recipe for soup
1 cup butternut squash puree
1 cup chicken bone broth
3 TBS Raw milk
1 heaping tsp cinnamon
mix well heat and eat.
Lunch was a super big chicken thigh and spinach sauteed in bacon grease with black pepper and garlic.
Dinner was a wash, it was late after getting home from the Minute Clinic with my DH and my pain level was through the roof.
I made a smoothie with 1 frozen green tipped banana 1 cup raw milk 2 TBS almond butter and cinnamon. I ate a hard boiled egg with that. No pictures. I also snacked on pistachios today.
I do know that if I can move my head after the Chiropractor today, there will be a visit to Trader Joe’s for the rest of the ingredients for the smoothies in the book and some more butternut squash. I really need more vegetables in my life, but without many of my old favorite dressing options for salads, I’m not in a rush to eat a salad!
I am going to try and post every day, if not every other day. I will post pictures of what I eat, the good, the bad and the ugly!
I will also try and tell you how I’m feeling.
What I ate the first day;
Breakfast ~ Carrot pumpkin muffins from the book, topped with Apple pumpkin butter, maybe 1 TBS ( 21 DSD approved the recipe) and bullet proof coffee made with Kerry Gold unsalted butter, coconut oil, cinnamon and cacao powder.
Lunch ~ Two eggs fried in bacon grease on top of Spaghetti squash hash browns.
Snack ~ Very small Granny smith apple ,Sunflower seed butter and 1 ounce of raw milk grass fed cheddar cheese.
Snack while shopping ~ Pistachio’s ( this was to keep me from sampling Holiday stuff!)
Dinner ~ 2 roasted chicken wings, drumstick ,a few slices of chicken breast with asparagus and a glass of raw milk. No pictures of the chicken or asparagus, they weren’t picture worthy 😉
How I felt ~ hungry all day and I was making sure to drink a lot of water and had 8 ounces of Home brewed Kombucha. I made extra chicken last night and boiled some eggs.
I’m having a hard time with some pain right now, due to getting tackled by a sweet playful pup on Sunday night. The pain was in my shoulder ( rotator cuff injury from years ago) on the right and today I can barely move my head and neck. The good news it’s not diet related and I go see my Chiropractor Wednesday! The bad is it’s making it difficult to type, cook, drive, shower, get dressed and everything else I forgot to mention. Here is to day 2 of the 21 DSD!!! Oh and nobody has died yet 😉
